Just to speculate how long it might take to cross the map end to end in a car in real time. I'd say San Andreas took around 8 to 10 minutes by car from Los Santos to Bayside or the desert airstrip, without crashing ( or stopping to mess about on the way for the hell of it ) but obviously the new map will be far bigger so I'm hoping for at 30 minutes this time round or maybe even more, that would mean even a jet would take 10 minutes at least to cross the map.

You must be kidding. 30 minutes? That's like Just Cause 2 if not longer. I don't know. I don't have this game. But there is no way that it'll take 30 minutes to cross the map in GTA V. You'll have to deal with big disappointment, my friend.
I forgot how long it took in Red Dead from the top right of the map (or Tall Trees) to the bottom right of Mexico.. but if I had a guess I'll say double that time

I hope it will take 48 hours to cross the map by car (in-game time). I don't know how much 1 in-game hour in GTA IV corresponds to real time but if you know you can make the calculation.

I think 30 minutes is a bit too long. I think maybe 15-20 minutes. I'm not 100% sure though. I can't remember how long it took to get from Grove St to San Fierro in San Andreas so I can't really compare.
I think a good 15-20 minutes would be perfect. People complaining about not wanting to travel long distances, remember the cabs in GTA IV? Enter destination and skip journey, easy.
I remember reading somewhere that in Just Cause 2 it took around 10 minutes to get from one side of the map to the other in the fastest jet in the game.

First San Andreas ever took me 10 minutes to drive across. I have to say I'd like the map to be 36square miles. That would take a while.
I know for a fact that even though the V map may not be as big as some Just Cause crap or Fuel, it will be many times better because of the level of detail and it's actually going to look interesting. Games that usually have incredibly huge maps most of the times have a lot of repetition and/or low level of detail.
