As for sports I'd like to see: Golf, skeet-shooting, tennis maybe.
I doubt there'll be team-sports, like football or volleyball, due to AI-requirements being an unnecessary workload. 1-on-1 basketball maybe, but even that might be too tricky to handle.
All sorts of racing, be it in cars, boats, planes or on bikes or just on foot would be easy additions though. Rock-climbing and surfing sounds cool as well.
Edit: Oh and if they go as sports, then all the games from RDR. I'd like to be able to bet on horse- or greyhound-racing, with fully animated races.

Also randomly generated sports highlights for the tv or radio would be nice. And for added realism, an increase in NPCs wearing team jerseys on days of games and crowds near stadiums.
