I would assume the generally accepted theory is that while we are made aware of their existence and generalized overall goals, we're never made aware of who exactly is doing what.

Assuming they do exist and are evil, us sitting here mindlessly arguing over whether they not exist would have no negative effect on their goals. It might actually help as if something does get exposed it will just be dismissed as conspiracy theorist bullsh*t and never taken into consideration by the general public, even if all evidence points towards it being true.
I'm going to go out on a limb here and say that the biggest proponents of the existence of an all knowing, all seeing Illuminati are probably religious as well.

So I'm assuming you believe in this evil organization, so the only way to escape their grasps is to disconnect with society? I'm just trying to find out what the end game is here, if there's an evil society/organization out their trying to control my mind I'd like to know what they plan to do with my mind once they have it and what I can do to prevent it.

Do I specifically believe that this 100% exists? No. Do I believe it's possible? Yes.
That said, the best way to avoid being controlled by such an organization would be to disconnect yourself from the masses. Not cut your self off, just keep your mind on guard and don't let any of what you see on TV go to heart.

I believe that there are very old, very rich men who probably pull strings to make world conflicts/assassinations/other disruptive stuff happen that increase their already retardedly big revenues only because that's pretty much common sense/human nature. Do I believe that there are reptilian/alien people who call them selves the Illuminati and look to bring humanity to their knees so that they can lay eggs in our stomachs? No, no I don't believe that because it's just too outlandish, I can't absolutely deny that it isn't the case, but I also can't absolutely deny that their are little green men inside my head controlling my every thought and movement.
You guys are putting too much faith in human intelligence, a lot of people don't need big fancy evil organizations with master plans of manipulation and mind control to fall for something.
