I want Max Payne 3's aiming system because it is simply going to be an improvement in every way, given that the animations will be more fluid and I like that Max is able to shoot without having to zoom in, staying in almost the same camera position as walking around normally. I guess I just prefer that, especially if we can do some of the things like 360-degree prone position shooting (the shooting and jumping at the same time might be a bit over the top for GTA, though). Basically, all of that, plus an auto-aiming option, because it's pretty much tradition at this point. It can be off by default if that makes shooters happier.
I think we'll see something more along the lines of an improvement on RDR's shooting mechanics, which were simply an improvement over GTA IV's. Remember, they'd been working on GTA V for a while now, which means that it would be building on RDR rather than building on MP3. Just because it's coming out later doesn't mean the improvements MP3 has made on the RAGE engine were there for the majority of GTA V's development. So it's likely to be more like GTA IV/RDR. Plus, MP3 is a different genre, and its shooting mechanics are part of its selling point. GTA V is probably going to have a more generic shooting mechanic that doesn't stand out in the same way. I hope that they don't do that, and instead actually improve on MP3's shooting mechanic, but I don't think that's going to happen.
