Can someone give me a list of enterable buildings in GTA III?

I'm afraid there are no interiors that you can enter in GTA 3.Except when the cutscenes occur.

Actually, there are. However, the game doesn't load when you enter one like in the other (III era) games, except the toilet in the park in Staunton. There's also Salvatore's mansion, the subway stations on each island (4 in total), the first safe house (although you can't really explore the interior) and all Ammunation stores. That's all as far as I can remember.

Edit: Actually the Ammunation stores also load, and the subway stations aren't exactly interiors I guess, they are similar to the tunnels in terms of the game's programming.

The only "interiors" in this game are the Men's Toilet in Belleville Park (3 parts) and AmmuNation on both Portland and Staunton Island.

Other locations are not really interiors. They are a direct part of the game's exterior world, if I can call it that.

Anyway, here's the full list you requested:

You can actually explore it.
As soon as you get in, quickly jump thrice-twice all the ways to the end of the wall, near the bed. Game wont save, but if you go like 2 tiny steps back it will save.
The Shoreside Vale house interior can be explored too, but there is really nothing special to see, just the Vending Machine.
And Staunton Ones - That trick doesn't work, you can clearly see it either ways, and it's too small,
and there is literally nothing to see either ways.
More Boring than the Shoreside one.

On the second island there's an enterable tw@ store, the first one in GTA ever! It's an easteregg, there's an easteregg inside aswell where GTA 1&2 are playing on the computer!

Yeah, there isn't a gun store in in SV, just some weapons in a garage below the police station.

I didn't have imagined that there are so many interiors which can be visited except the safe house in the portland because I once visited it.
So All of them are:
1. Salvators Mansion
2. Ammunation Portland

Well, Kenji's and Donald's Rooftop is in exterior but I listed it because it is difficult to get inside it.
Pretty much like most I listed.
