If you mean by playing the PSP game on the Vita then no, the graphics are no different and never will be unless the game is re-released as a Vita port.

Well in the OP I meant does it look good with the larger screen, I mean does it look stretched or anything.

PSP games look a little bit better on the Vita.
The Vita has a better contrast and show more vibrant colors, if you activate the bilinear filter you remove some of the aliasing.
Also, the color space filter improves the visuals of some games as well.
