The intended capacity of most of them is two, some one and some three, bust most two.
As you probably know you can fit more than the amount of cars meant to fit in them. If you fit one more than usual itll be fine, but if you fit two more than the intended capacity you run the risk of one or maybe even two disappearing.
This rule works for all size capacity garages, whether it be one, two or three car garages.
There are 20 save garages in the game. Each has room in memory to store 4 vehicles, except the 3 impound lots will only hold 3 each - so a total of 77 vehicles. You'll need to fiddle with the door of the garage at the Johnson house to get it to hold more than 2, but it will reliably save all 4 vehicles. The impound lots are tricky. See Care and Feeding of a SA Impound Garage for more information.

Sure it's an old game, and there are many topics about garages...but the answer to my specific question is not found in any of them. Those topics all revolve around squeezing cars into save spots and mods.
Trying to give you (and others) information. So you don't have cars to store that don't have special properties? You aren't going to ask why the special paintjob and accessories disappeared when you stored them?
When I say "intended capacity" I don't mean how many cars can technically fit (judging by the memory available). I mean using common sense, how many cars comfortably fit. For example, the garage at CJ's Mom's house is meant for 2 cars. Obviously saving cars on the roof is not what I meant either.
So using that definition, how many cars can you have saved at once (combining every safe house)?
Sorry for the redundancy, but I can't deal with stacking cars on top of each other and such.
