Well, not all side missions give money as reward, actually only the triathlon gives 1,000$ for each won triathlon.
Here's a table with the side missions that give you a reward that doesn't consist in money.

Drug Wars
# CompletedReward
10 Drug Wars completed.44 delivered to safehouse.
20 Drug Wars completedAdvanced MG delivered to safehouse.
30 Drug Wars completedExplosive Shotgun delivered to safehouse.
40 Drug Wars completedSticky Bombs delivered to safehouse.
50 Drug Wars completedGold SMG delivered to safehouse.
Base Jumps
# CompletedReward
All Base Jumps completedParachute delivered to safehouse.
Seagulls
# CompletedReward
All Seagulls exterminatedAPC available from Yusuf's building site.

And I don't believe that any side mission is the same as the courier side missions in San Andreas.

Actually, the Drug Wars in BOGT do net you money after each war completed, anything from $1,000 to $18,000. After 50 of them I'd amassed about £400,000. You also earn money doing the base jumps, although it's not much - you need to pass through the ring targets (about $30 for each) and get a reward for landing on the target - moving vehicle or bullseye.

Seagulls don't earn you any money, neither do the Club Management missions (I think).

I consider it a flaw that Club Management doesn't earn money, since that's Luis' actual job. It's hard to understand what Rockstar meant. Is Tony in so much debt that Luis works for free? I just tell myself his salary is invisible in the game because it's used for the invisible rent payments for Luis' apartment and he gives the rest to his mom or something.

Drug Wars is definitely the side mission you're looking for. After a few of those you'll have plenty of dough.

Club Management missions do give you money but not much at all. Few hundred I think.
